Kitchen Manager Responsible for ensuring all menu items meet the Food and Beverage standards of fresh, appetizing and properly prepared. Responsible for kitchen functions including, but not limited to food quality management, supervision of all kitchen staff, “hands-on” involvement with inventory controls, kitchen cleanliness, sanitation, and safety. Provides leadership, development and communicates the company’s Vision, Mission and Values to all back-of-house associates. ¨ 2 years of kitchen experience in a line capacity of a high-volume, high-quality establishment. ¨ Proficient in kitchen operations and execution. ¨ ServSafe certified. ¨ Ability to maintain composure, take control during high demand business circumstances. ¨ Manage work environments that achieve high levels of job satisfaction among team members. ¨ Effective oral and written communication skills; the ability to provide clear direction, resolve disagreements, influence strong performance, and produce clear and concise documentation with minimal supervision. ¨ Ability to collaborate well with supervisors, peers, subordinates, guests, vendors and corporate partners. ¨ Proficiency in MS Office. ¨ Effective analytical, planning, and problem solving skills. ¨ Possess up-to-date and relevant knowledge and trends of the food service industry. ¨ Culinary degree preferred. ¨ H.A.C.C.P. certification preferred. ¨ Obtain and maintain current T.I.P.S. Certification, as applicable. ¨ Obtain any necessary alcohol service licensing requirements. ¨ Provide leadership and guidance to back-of-house associates to achieve optimum kitchen operations by focusing on the ability to deliver results through planning and execution. ¨ Drive revenue by providing excellent guest experiences which meet and exceed guests’ expectations for food quality, speed of food delivery and overall value. ¨ Manage BOH labor, food, beverage, repair, maintenance and supplies costs to achieve financial targets using company processes, systems and appropriate MIS reports. ¨ Recruit, train, develop and appropriately coach back-of-house associates with consultation from the Senior Manager or the General Manager with emphasis on developing future kitchen managers, hourly managers and lead cooks and expeditors. ¨ Ensure delivery of the best possible out-of-home entertainment experience by ensuring all food and beverage items are fresh, appetizing and properly prepared. ¨ Scheduling back-of-house associates within company scheduling parameters. ¨ Adhere to recipes to ensure consistent food quality and presentation. ¨ Conduct twice daily line checks to ensure food safe temperatures, ingredient quality and readiness for volume. ¨ Develop, implement and update prep lists to ensure proper amounts of prepared products are available at all times. ¨ Maintain communication with cooks to ensure proper assembly of food orders within established average ticket time. ¨ Oversee food preparation by working with cooks and kitchen prep associates to monitor portion size, productivity, and quality presentations while ensuring production times meet or exceed established targets. ¨ Follow all procedures to ensure that the Facility is clean, safe, and in good repair for both associates and guests. ¨ Maintain kitchen equipment by following manufacturer’s operating instructions, educating staff in proper use, maintaining equipment supplies, and calling for repairs as necessary. ¨ Ensure sanitation and food safety standards are met. ¨ Perform all additional tasks and responsibilities as assigned. ¨ Uphold AMC’s Business Practice Standards and ensure compliance with company programs. ¨ Maintain regular personal attendance for all scheduled shifts. Tools and Machines Used ¨ Moderate temperatures in the lounge, bar and Fork & Screen auditoriums; moderate to hot temperatures in the kitchen areas. Flooring is tile in the kitchen and carpeted or tile in the lounge area and auditorium. Auditorium floors are either stepped or sloped. Cool to cold temperatures in the walk in refrigerator and freezer. Associate may encounter wet or slippery floor surfaces. The exterior work areas may have extreme temperatures depending on weather conditions. ¨ Ability to lift up to 50 pounds and move it 75 yards on a regular basis. ¨ Ability to walk, lift, twist, bend, reach, and handle food products on a frequent basis. ¨ Ability to stand on feet for an extended period of time and ascend and descend stairs.
